Solar Cooked Black Eyed Peas
cotechino with lentils. I never really liked it much and was glad it only seemed to be consumed once a year. I wanted to honor the tradition but wasn't in the mood for a fat laden meal so I opted for solar cooked black eyed peas to be served with a roast pork tenderloin. I put the peas in the Sun Oven in the morning with a little olive oil, onion and liquid smoke. The rest of the meal was prepared in the evening inside. Pork tenderloin is too lean for slow solar cooking, it's much better to roast it at the high temperatures of a conventional oven.
